Carrot and Feta Breakfast Muffins Recipe

"February is over and it’s time for me to start planning the food for the Pewsey Downsaround on the 23rd April. As I got my recipes out I remembered Clive suggesting I submit the occasional recipe for the newsletter. This one is for the muffins that were rapidly demolished at Checkpoint 1 last year.

If you would like to contribute some baking (sweet or savoury) for the event please let me know ( We can pay for the ingredients. The food needs to be at the Pewsey Scout Hut early on the day of the event. If you can’t get your baking there let me know and I can probably work something out. I’ll put out a further call for baking out again nearer the time.

  • Fry a small onion in 50g of butter until soft and add 1 teaspoon of ground cumin and leave to cool;
  • Preheat the oven 180 degrees/ gas mark 4;
  • Put 12 large muffin cases or 24 bun cases into an appropriate tin;
  • Sift 100g plain flour, 100 grams of fine polenta/ cornmeal, 1 1/2 teaspoon of baking powder, 1/2 teaspoon of salt and some black pepper into a bowl;
  • Add 2 grated carrots (about 200g) and 180g of crumbled feta cheese, 2 teaspoons of fresh dill and the fried onion mixture;
  • Beat 3 eggs with 150ml milk.

Add to the dry ingredients and mix. Pour into the prepared tins. Bake for 22 - 15 minutes. The muffins will rise high then drop back as they cool. Alternatively this makes a 1.5 litre loaf tin sized cake. Bake for 40 minutes and leave to cool in the tin for 5 minutes."
